Friday Night Wings
Ingredients:
As many wings as you need (try and buy large ones)
The White Rub
The Four Saucemen The Chicken Rub or Manuka Hot Honey rub.
The Four saucemen Wing Glaze or Manuka hot Honey Glaze
Duck fat spray or olive oil spray
The Four Saucemen Friday Night Chicken Wings
For Best results, apply a layer of The White Rub. This will dehydrate the skin for a crisper bite. (allow 1 hour) Thank me later
Set your Barbecue up for direct cooking at 180c - 200c
Spray a light coat of Duck Fat Spray and coat all sides with The Chicken Rub or The NEW Hot Honey Rub
Place the wings skin side down first and build the desired colour. You will see the colour start to change and the skin will shrink. Flip the wings and again check the desired colour. Use your internal meat thermometer and check the wings. You are looking for an internal temp of 165f or 74c to start. This may take 30-40 minutes depending on the size of the wings. If the wings are getting too dark in colour place them in an indirect cooking zone to cook them through. Remove the wings and place in a bowl big enough to toss the wings in some The Four Saucemen Wing Glaze or Manuka Hot Honey glaze for a little heat.
Place the wings back in the Barbecue. You can cook to colour or internal temp. I take ours to 175-185f or 80c to 85c internal temp. This will help set the sauce and give you a moist tender wing.
